Traditional Temple Sambhar

Preparation Steps

01

Dal Preparation

Pressure cook the toor dal with turmeric and 3 cups of water until it's completely mushy. Whisk it well to a smooth consistency.

02

The Tamarind Base

Extract the tamarind juice and bring it to a boil with the vegetables, salt, and a pinch of turmeric. Simmer until the vegetables are 80% cooked.

03

The Spice Bloom

Add 2 tablespoons of Iyengar's Sambhar Powder. The aroma should immediately remind you of a South Indian temple kitchen. Let it boil for 5 minutes.

04

The Final Simmer

Stir in the mashed dal. Adjust the consistency with water if needed. Bring to a gentle boil and add the tempering of mustard seeds and curry leaves fried in ghee.

Master Blender's Secret

“A small piece of jaggery added along with the Sambhar powder enhances the earthiness of the lentils and creates a perfectly balanced tang.”
