Preparation Steps
Dal Preparation
Pressure cook the toor dal with turmeric and 3 cups of water until it's completely mushy. Whisk it well to a smooth consistency.
The Tamarind Base
Extract the tamarind juice and bring it to a boil with the vegetables, salt, and a pinch of turmeric. Simmer until the vegetables are 80% cooked.
The Spice Bloom
Add 2 tablespoons of Iyengar's Sambhar Powder. The aroma should immediately remind you of a South Indian temple kitchen. Let it boil for 5 minutes.
The Final Simmer
Stir in the mashed dal. Adjust the consistency with water if needed. Bring to a gentle boil and add the tempering of mustard seeds and curry leaves fried in ghee.
