Preparation Steps
The Foundation
Cook the rice with a 1:2 ratio of water. Ensure the grains are separate and not mushy. Spread the hot rice on a large plate or 'thali' and let it cool completely. This is crucial for the perfect texture.
The Infusion
Once the rice is cool, add 2 tbsp of sesame oil over it. Add the Iyengar's Puliyogare Gojju in stages. Fold it gently into the rice using a flat ladle, ensuring every grain is coated in that deep mahogany tamarind essence.

Add the dried red chilies, curry leaves, and hing to the tempering. Once fragrant, pour this sizzling mix directly over the prepared rice. Mix one last time with devotion.
