Preparation Steps

Tamarind Infusion

Dilute the tamarind extract in 3 cups of water. Add the crushed tomatoes, salt, and turmeric. Bring to a gentle boil until the raw smell of tamarind disappears.

The Aromatic Addition

Add Iyengar's Rasam Powder. Stir gently. Lower the flame and wait for the 'froth' to appear. Do not let it boil vigorously after adding the powder—this preserves the delicate peppery aroma.

The Garnish

Once frothy, add the chopped coriander leaves and switch off the flame immediately.

The Tempering

Heat ghee in a ladle. Add mustard, cumin, hing, and curry leaves. Once they splutter, pour into the rasam and cover with a lid immediately to trap the scent.
