Preparation Steps
Sauté the Brinjals
Heat oil and splutter mustard seeds. Add urad dal, peanuts, and curry leaves. Once golden, add the slit brinjals and turmeric. Sauté on medium flame until the brinjals are tender.
The Spice Fusion
Add the tamarind pulp, jaggery, and Iyengar's Vaangi Ba'ath Powder. Stir well and cook until the oil starts to separate from the sides of the pan.
Rice Assembly
Gently fold in the cooked rice. Ensure you don't break the grains. The mixture should evenly coat the rice in a beautiful dark brown hue.
The Heritage Finish
Garnish with fresh coconut. Cover and let it sit for 5 minutes before serving to allow the aromas to settle.
